Almond Protein Birthday Cake!

So to celebrate my birthday, I'm posting a birthday cake themed recipe. (I made this a few days ago to test though and pics are from that time). It's a recipe high in protein, low in carbs, and moderate amount of healthy fats coming from almond flour. The cake itself is a little bit dryer because of the high protein and the almond flour but it's meant to be used with a frosting or you can eat with a sugar free syrup as it soaks up the liquid so well. Another thing is be careful to not overbake it. It's done when a toothpick comes out clean and it continues to cook when you just take it out. I'll post general cooking times but your times may vary depending on your oven (or air fryer, they can be used to bake as well).
Tools you'll need :
Large mixing bowl
Baking pan ( I used a square Silicon one from this set from Amazon: https://amzn.to/3AJurRE I may earn a small commission if you purchase using my link. Why did I use the square one instead of the round cake one? Well, it's for my birthday so I'm going a little different haha)
Oven or Air fryer.
I used an air fryer and here's mine on Amazon : https://amzn.to/3e2wIOh
It's served me well for a year and I rarely use my oven since using the air fryer is much more convenient.
Fork and spoon to mix the ingredients.
Kitchen scale - here's a new one I got off Amazon: https://amzn.to/3hrWZHO
Review coming soon on it but in short, it's good and rechargeable thru usb.
Dry Ingredients:
130g whey - I used birthday cake flavor for obvious reasons.
115g Almond flour
30g Sweetener - I used allulose - https://amzn.to/3wtw82f
10g baking powder
Wet ingredients:
340g non fat Greek yogurt
2 large eggs
140g liquid egg whites
75g very ripe banana (its about a small-medium banana. Gives the cake extra sweetness and a good use for when your Bananas start to brown a bit)
5g vanilla extract
Instructions:
1. Take your mixing bowl and place it on your kitchen scale.
2. Measure out all your dry ingredients into the bowl and give them a good mix.
3. Add all the wet ingredients and mix thoroughly. You can use a hand or a stand mixer to make it easier but you'll burn some extra calories mixing it yourself ;)
4. Place it in your baking dish. Bake at 325°f for 30-40 minutes. I recommend to start checking it at about 25 minutes to make sure you don't overcook it.
5. Let it cool a bit as it'll continue to cook as it cools down. If you're adding a frosting, wait until it's completely cold. I'll post healthy frosting options soon but really easy ones are fat free cream cheese mixed with some sweetener or fat free greek yogurt mixed with flavored whey or sweetener.
6. Enjoy and please leave a comment on what you think, what variations you made, or whatever comment you feel like haha.
7. Happy birthday to me! Haha.
